I fell asleep yesterday morning at 4am and started work at 8:30am. Waking up during my shift may or may not have happened, and pretty sure my efficiency level was in the toilet.
Not sure what time I fell asleep after work last night, though sure it was reasonably soon after scarfing down leftover tikka masala. I’m in love with Safeway’s bottled sauces. They’ve definitely upped our variety in terms of home-cooked meals. They might not technically be 100% home cooked, but create fast, easy, savory meals and make a LOT of food.
No, the photo below isn’t from yesterday. It’s shrimp primavera and stuffed portabello from last week. This also employed shortcuts: the pasta was a pre-packaged pesto/rotini mix. Lipton brand, I think? Knorr? Can’t recall.
I’m too lazy to create homemade pesto. I just cooked the pasta, threw in salad shrimp, added sauteed squash & onion, and added fresh chopped tomatoes and bell peppers. There’s a lot more shrimp in there than is obvious in this photo. It was filling, yummy, and a heck of a lot healthier than drive through or delivery. This one wasn’t much cheaper, though, when you calculate in the price of shrimp.

I’ve been working at home for over two years now, so the pandemic hasn’t represented a huge change for me in terms of lifestyle. Working from home, however, has definitely resulted in spreading “assets”.
I love all food, including healthy food, and have already had discussions with the spousal unit about doing salads for at least 2-3 meals per week. Lucky for me he’s onboard with that plan. Will it turn the tide for my waistline? We’ll see. I originally decided to go back on Atkins, which helped me take off 70 lbs a few years back. Over the years, it came back and brought along more friends with it. Unfortunately it’s nearly impossible to do Atkins when it would entail cooking separate meals for just the two of us, so I’m trying to find a practical compromise.

Reference to working from home… while eating.
I did invest in a couple of boxes of Atkins desserts over the past couple of weeks, for myself. They work because they’re sweet enough to take care of cravings, but are vile enough I’m never tempted to eat more than one. The only other sweets I’ve had recently have been fruit. And no, I don’t mean apple pie. (Though not for lack of temptation.) Husband can take or leave desserts, fortunately, which helps.
Given that our moving timeline keeps inching ahead, we’re going through all our stuff and packing and getting rid of things we don’t need right this instant. I’m taking a day off next week, specifically to cull from my part of the crap – via trash and donation – and start packing away what I intend to keep. The husband person is still thinking of an October move. It’s wishful thinking on his part. Unless something drastic happens, we’re more than likely moving in September.
Can’t say I’ll be sorry to say good-bye to the tin can and the park, though I know my husband will miss his buddy who lives around the corner. I haven’t hated living here – it’s quiet and safe, and the location is convenient in a lot of respects. Our tin can itself isn’t awful, other than being cramped for space. I am going to miss the cheaper living here, even though I know the costs here go up every year. In the long run, the house will cost less.

I’m glad you have the house to look forward to. It will be nice for both of you to have more space. Going through your belongings is a chore. It’s starts out difficult but as the move date gets closer, suddenly those things don’t seem quite as important and it is easier to give them away.
I can’t believe I missed this one. I usually get notifications via email, but not this time. Oh well.
I gotta say, that stuffed mushroom and shrimp pasta meal looked killer. Good for you! I hear ya about the trials of trying to produce two seperate meals when you’re on a diet. I have the same problem, and I am Kitchen God incarnate. What I do is generally make a massive batch of some low carb base – roast off 5 or so pounds of chicken thighs, brown up a couple of pounds of ground beef, etc. – and keep them in containers in the fridge. When I make our meals then I can just grab two pan fulls from any one of the tubs then keep one simple for me and mix the other with any starch NewWifey(tm) likes in the other. That includes sauces. It’s not absolutely ideal, but it’s the most easy to follow method I’ve come up with so far. Hang in there, it’ll be worth the weight. 😉
