Well, Dangerspouse, I used your suggestion for the lamb with raspberry and rosemary (and garlic). I must confess, while I’ve cooked a lot of different cuisines over the years, this is my first experience with flambé. (I used brandy, by the way.) Luckily it was easy to do and the end result was terrific.
If you didn’t follow the comments, I’d gotten some lamb shoulder chops and asked Chef Danger for a recipe suggestion. I followed his directions, added some roasted asparagus, mushrooms, and potato for sides, and called it dinner. My attempt at garnish was pretty lame, as you can see; but since it lasted about fifteen seconds – just long enough to take a picture – I refuse to stress about it. (To be fair, it started out looking better, but the husband person took the photo and juggled things around to get everything into the light.)
Next time I make it I’ll use a heavier hand with some of the ingredients, I think. Husband and I both like raspberries, and with the lamb it’s an unexpected touch. I went light on the jam, afraid of getting it too sweet. Next time I plan to use a bit more.
If you follow me on FB, you know my new computer just pinged my last nerve and I’ve asked to return it. When I bought it, I bought the super-uber coverage and support plan to go with it, thank God. It started crashing on Day One. I ran some diagnostics which said, “Update, already.” So I did. Aaaand… no help. Watch YouTube or any video: crash. Do something random: crash. Do nothing at all: crash.
I’m so fed up with it, I’d prefer to chuck it through the nearest window – but will settle for trading it for a different model altogether. Waiting to hear from Dell support to see what they’re going to do. Worst-case scenario I’m going to hound them to get it fixed, but I’d prefer to swap it out for something with an Intel processor and a hella lot fewer issues.
I won’t bore you with all the stuff I’ve done to try to fix the thing. Suffice to say I’ve wasted enough time on it and said, “No more.” For now I’m back to using my old laptop for the time being. It works a lot better than the new one.
Here’s the kicker: my baby sister just gave me a virtually new laptop, a baby Dell with lots of RAM and an SSD. She bought it for herself a couple of months ago, used it twice, and decided to go for a Mac instead, She asked if I wanted it. That was a big ol’ DUH. It’s an itty bitty size, but I’m good with that. It means longer battery time and easier to lug around. So whatever happens with the dead behemoth, I’ve got new ‘puter anyway.
So glad the meal turned out well. It looks delicious despite any moving around of ingredients for the photo. And congratulations on the baby computer. I’m sure you will put it to good use.
I just updated the maps on my old Garmin GPS. Then I tried to update my new Garmin and I can’t get it to work. So guess I will be making a trip to Best Buy to see if they have any ideas. I was going to give the old GPS to one of my sisters but now, maybe I will keep it for myself. LOL
Have to love how “progress” doesn’t seem to work as well as the old stuff.
In theory this should’ve been a killer machine. It has awesome specs. But the execution… Well, it was all but DOA. So fed up with it!
Holy Escoffier, Batman! You really did me proud, babe. Well done, well done indeed! And look at that plating – gorgeous! Those asparagus spears look *perfect*. And look at the cute little mushroom caps! Bravo, all of it!
I’m so glad to hear you both enjoyed the flavor. I always worry when I recommend a recipe – particularly one of my own making. But this was very heartening to read.
One question. When I make this lamb dish it always produces a pan sauce. A fairly thick one that I nap the top of each chop with. Did you not end up with any sauce, or did you just forego pouring it on? Just curious.
Oh, and great news about your new freebie computer! I guess relations can be useful after all, huh?
🙂
I didn’t have a lot of sauce – as I said, I skimped when I should’ve been more generous with some of the ingredients. I didn’t have much and felt like it was too skimpy to pour over.
It was still scrumptious! I originally had the raspberry and mint leaves atop the lamb, but hubby moved things around. Ergo sauce discolored the leaves, etc. But I’m still happy with it overall and hubby asked when we can have it again. I think he liked it LOL. Thank you!
*sigh* When will men learn to stay out of the kitchen? That picture needed raspberries and mint leaves, dammit!
Lol. You’re very welcome 🙂
